Rene Pagauga and his family started Finca Los Congos in the San Fernando mountains of Nicaragua in 1997, and though the farm is relatively young, it's backed up by years of experience and wizardry! Having grown up with coffee flowing through his veins, Don Rene brings expertise stemming back to the 1930s to create some of the most brilliant coffees to ever come out of Nicaragua. With a careful attention to detail in their sustainability efforts to keep the native animals and plants undisturbed, while cultivating rich, fertile soil, the Pagaugas have shown an incredible amount of dedication towards the longevity of coffee in the region.
We're wonderfully fortunate to bring you something incredibly unique from the Pagaugas! Coffee as we know it is the seed of the coffee cherry - the process of its extraction involves the removal of the cherry itself to retrieve the seed, but what happens to the cherry? Fortunately for us, the Pagaugas have taken the cherry and processed it to create CASCARA! In each bag, you'll receive 8oz of dried coffee cherry to brew just like you would brew a loose leaf tea. We like to say you can really taste the processing method when it comes to cascara - this is a naturally processed Caturra varietal that tastes of rich, sweet dried fruit, and is something that is completely different from how most of us first experienced coffee!
